Deeeelicious healthy banana-blueberry oat cookies!

6 bananas, mashed
4.5 cups oats
2 cups frozen blueberries
2 cups unsweetened applesauce
1/2 cup Splenda brown sugar blend
3 tsp vanilla extract
2-3 tsp cinnamon

Bake at 350 for 30 minutes
Makes 36 at 74 calories each and tons of good for you things like potassium, vitamin c, etc. etc.


This is how I spent my Saturday evening: making goodies with my lovely husband (well, he was working on cutting beer bottles most of the time, but whatev). I made bath salts, sea salt scrub, peppermint foot scrub, and lip balm! Practicing for the super thrifty Christmas gifts I’m going to pawn off on my loved ones this year instead of real gifts that cost real money! Yay!

Made roasted red pepper and tomato soup with black beans, chickpeas, and lentils. Was feeling some oriental flavor so I added some tandoori spice and green curry! Omnomnom so delicious! Oh, and never forget the wine…

Dinner! Spinach, tomato, and beet pasta with peppers, onions, zucchini, and spinach… Om nomnom. Oh and the best part, wine! Vegetarian meals > feeling like shit. Wine > almost everything.

Schlafly Coffee Stout cupcakes with buttercream/coffee liqueur icing!

So everyone that knows me knows that I am in a torrid, unhealthy love affair with wine. And what better way to support my alcoholism than combining it with my love of baking and sweets! Behold, Alice White Moscato cupcakes with moscato and buttercream icing! This recipe was super easy and delicious, but I was ridiculously lazy and uninventive and just added wine to premade buttercream from a can and attempted to thicken it with confectioners sugar. Big mistake. The consistency is way too thin and runny, so ignore that particular aspect of the cupcakes. Other that that, I’d say it’s a win!

P.S. If you are trying desperately to give up highly processed and refined grain products, such as pasta, but still have intense cravings for them (like me), simply google Miracle Noodle. It is currently the middle of week two of our vegetarian/veganish diet, and what do we have to show for it? An incredible amount of energy, a new outlook on the way we eat and the things we put into our bodies, and a shitload of new, delicious recipes! Oh, and the weight loss doesn’t hurt either…

Behold! Butternut squash, granny smith apples, raisins, and chopped almonds baked with honey, cinnamon, and vanilla. YUM!

Veggie stuffed bell peppers! Delicious vegan/vegetarian meal my husband prepared! Healthy and scrumptious..I could really get used to this healthy eating thing.
